  • 1 small poblano pepper
  • 1 small serrano pepper
  • 3 tablespoons canola oil
  • 1/2 onion, thinly sliced, or to taste
  • 2 cloves garlic, finely chopped
  • eight ears corn, shucked and kernels eliminated
  • 1 roasted red pepper, diced
  • salt and freshly floor black pepper to taste
  • 1 lime, juiced
  • 2 tablespoons cold unsalted butter
  • 2 tablespoons creme fraiche
  • 2 tablespoons finely chopped fresh cilantro
  • 1/four cup grated Cotija cheese
